Abstract
In current paper the ways of obtaining oils of controlled composition for the food, perfumery, cosmetic and pharmaceutical industries are considered. The suitable composition of oils depends on the field of their application, for example for dietary supplements, preference is given to oils with a high content of polyunsaturated fatty acids, vitamins and antioxidants, especially squalene. Meanwhile, for oils used for frying and other heat treatment, the content of PUFAs and other compounds with many double bonds is recommended to be reduced.
It is proposed to modify the composition of natural vegetable oils using low-temperature fractionation technologies and microwave extraction. The fatty acid compositions of the research objects - amaranth and sunflower oils were analyzed. It is assumed that low-temperature crystallization of certain fractions of amaranth oil will allow to obtain products with an increased content of squalene, without a significant effect on the oxidation of unsaturated fatty acids. It is also assumed that targeted energy delivery technologies will allow to increase the output of oil from oil production waste.
By means of low-temperature fractionation, samples of amaranth oil with different fatty acid composition, as well as products with an increased content of squalene, were obtained. The chromatograms of the fatty acid composition of the obtained products were obtained.
As a result of the extraction of sunflower cake with the implementation of the principles of targeted delivery of energy to the microstructures of raw materials in periodic microwave and volumetric vacuum extractors, samples of oil with a fatty acid composition unusual for sunflower were obtained.
