Анотація

В усьому світі індустрія харчування для людей з підвищеним фізичним навантаженням переживає бурхливого розвитку. Для України найбільш гостро цей фактор стосується харчування військових і спортсменів, які знаходяться під постійним впливом фізичних та психоемоційних навантажень. Проблеми харчування для людей з підвищеним фізичним навантаженням, в т.ч. спортсменів і військових є багатофакторними, пов’язаними з особливостями основного раціону харчування, характером фізичного навантаження і відповідності енергетичних витрат та багато ін. Аналізуючи багаточисельні дослідження закордонних і вітчизняних вчених можна зробити висновок, що ефективним способом задоволення підвищених потреб організму спортсменів та військових є додаткове споживання в раціоні харчових добавок різного складу і спрямування. Збільшення попиту стимулює подальший розвиток виробництва і  створення нових інноваційних технологій продуктів і добавок різного складу і призначення і робить цей напрямок актуальним, який постійно розвивається. Метою досліджень було проаналізувати стан і тенденції розвитку індустрії продуктів харчування для людей з підвищеним фізичним навантаженням, в т.ч. спортсменів і військових. Поточна класифікація спортивного харчування різниться для різних країн. Загалом, цей ринок є дуже різноманітним і охоплює виробництво протеїнових порошків, спортивних напоїв, енергетичних батончиків, білково-вуглеводних продуктів, різноманітних функціональних і енергетичних добавок та багато ін. Протеїнові порошки і їх похідні останніми роками зберігають найвищий попит і займають найбільший сегмент ринку. Значною популярністю користуються вуглеводні і білково-вуглеводні комплекси.  Значну частку продукції займають добавки для відновлення після травм м'язів, суглобів та кісток. Інновації стосуються розроблення нових спеціалізованих формул для задоволення швидко зростаючого спектру дієтичних потреб і оздоровчих цілей, пошуку ефективних систем доставки біологічно активних речовин, покращенню засвоювання і збільшенню біодоступності нутрієнтів.
